We don't even have to go online. Between our local butcher and Morrison's, if we want meat while we're shopping there, all offal and cuts seem to be available. The only things we've not been able to get for years are pork chops with the kidney in, and veal because "there's no demand". Otherwise tails, cheeks, bones, trotters, feet, liver, kidneys, hearts, suet, tripe, etc, etc, etc, are all available. So, no noticeable shortages of meat, fish or groceries so far, though fizzy water in 2ltr bottles is absent from Morrison's and Sainsbury's...

There are a lot of recipes I would like to try but getting the offal an similar from a butchers is not possible.
(I even have problems getting pigs trotters.)

It's amazing how you struggle with the easiest of tasks.

Took me all of 30 seconds.

I can explain it to you, but I can't understand it for you.

A bit of truth there. Some sectors have suffered personnel shortages for years but muddled through. What Brexit has triggered is acute shortages that have been accentuated by Covid...

Plus the refusal of Priti Patel to grant visas.

The current labour shortage is 100% to do with Brexit, there was no shortage before Brexit. The shortage is 100% down to Prit Patel refusing visas to EU citizens to do the work and the refusal to put it on the skill shortages list.
(Also at the moment there are hundreds of abattoir workers available in Brittany available due to redundancies, and abattoir closures. A situation that will  not last long because a new mega state of the art abattoir is being built to service a one million pig a year contract with China.)

The fact is that it is crappy job and few people want to do it, nothing to do with Brexit, more to do with Covid.

I did some work for a packaging company specialising in vacuum packaging. The Morrison's site near Burnley was one of my calls and it was due a refurb, whilst stripping the machine down we found maggots everywhere, it was not a pleasant experience, pretty much like the pig intestines bursting on me.

I took several race horses to a specialist abattoir many years ago.

I've been in a few abattoirs and it's a smell you never forget, it's almost as if death has a smell.

Don't I know it.

I have been in a few pubs like that. (Usually the only running water in the bogs is your own.)

That's what she said. He used to bring it home with him. There is no getting rid of it.

I can't imagine spending a life killing. It is one thing if it is as required in order to eat for those nearby, but wholesale slaughtering for others to stick on a shelf with a shelf life as a commercial enterprise feels wrong somehow. It must take a certain type of person so filling vacancies might be challenging.

Actually only a short time in a shift is spent doing that, there are frequent changes.
